Classic Nigerian Egusi Soup
A rich, savory, and nutty soup made with ground melon seeds, spinach, and a blend of traditional spices. Perfect when paired with Pounded Yam or Fufu.
Ingredients
- 2 cups ground Egusi (melon seeds)
- 1 cup palm oil
- 2 lbs assorted meats (beef, tripe, goat meat)
- 1 large onion, chopped
- 3 tablespoons ground crayfish
- 2 stock cubes
- 4 cups chopped spinach or bitter leaf
- Salt to taste
- 2 habanero peppers, blended
Instructions
- 1
Boil the assorted meats with half the chopped onions, one stock cube, and salt until tender. Reserve the meat stock.
- 2
In a large pot, heat the palm oil on medium heat for about 2 minutes. Do not bleach the oil.
- 3
Add the remaining onions and fry for a minute.
- 4
Mix the ground Egusi with a little water to form a thick paste, then add it to the palm oil. Fry for about 10 minutes, stirring constantly to prevent burning.
- 5
Gradually add the meat stock, blended peppers, and ground crayfish. Stir well and let it simmer for 15 minutes.
- 6
Add the cooked meats and the remaining stock cube. Simmer for another 10 minutes.
- 7
Stir in the chopped spinach, simmer for 3-5 minutes, and remove from heat. Serve hot with Pounded Yam.
